Surrounded on three sides by water, the peninsula benefits from a unique maritime climate that extends the growing season well into the fall—crucial for ripening grapes to their fullest potential. Cool nights and warm days allow sugars to develop slowly, preserving the natural balance and sweetness essential for our liturgical wine.
This slow ripening process produces fruit with complexity, depth, and structure—qualities that are vital for crafting the sweet red wine traditionally used in Orthodox worship.
